I am a junkie...seriously. I've been taking Tylenol PM pretty near every night for about a year so I can fall asleep. If I don't take it, I can count on tossing and turning all night-which is precisely what happened. I didn't even crawl into bed until 2:30 AM and then dozed on and off all night. I decided that I have to stop; this nasty little habit certainly isn't doing my liver any favors. What do you think it will take? Another night or two before my natural sleep patterns get back to normal? Maybe a shot of whiskey would help...just kidding.
It rained today-a good soaking rain. Something the Punxsutawney area hasn't seen in a solid 3 weeks. We haven't had to mow the lawn in that amount of time anyway, nothing is growing due to lack of water.
I ended up making 18 stuffed green peppers yesterday. For the 2 of us, that will be 6 meals (the big guy eats 2 as a serving). I love the idea of getting meals back into the freezer. What a life-saver on some days! Plus, it makes me feel like I'm more in control of my household when I have "freezer meals" to fall back on instead of getting take-out. Anyway, I plan on packing those up today in meal-sized portions.
What else today? Vacuuming (both of the furbabies are shedding), then a few loads of laundry. I'm tired, but resisting the urge to lie down and nap.

Yep, tried that. I turned C-Span on last night and that worked. I just got into such a bad habit of taking those pills....now just have to work myself back out of it. Thanks!
How do you prepare your stuffed peppers? Do you cook them before you freeze them? How do you prepare them once they've been frozen?
DH and I have recently discovered stuffed peppers as one of our favorite meals (thanks to a pregnancy craving I had at the time!). It would be nice to be able to put a bunch by and be able to just toss a few in the oven when the time comes.

Hi piney mama,
I do fully cook them before I freeze them. After that I let them cool completely (usually over night in the fridge) and then put however many I want in zip loc bags to freeze.
Usually, I'll let them thaw overnight in the fridge and then pour them out of the bag into a casserole dish, cover and heat in the oven or microwave. However, should a craving suddenly hit, defrost in the microwave first on a low setting and then continue with heating.
They hold up really well in the freezer-and to reheating- so you should have no trouble. Good luck!
